1 1⁄2 fl oz Bourbon whiskey
1 fl oz Exprè Caffè Italiano (or freshly made hot Espresso Coffee)
1⁄3 fl oz Brown/dark crème de cacao liqueur
1⁄3 fl oz Monin Caramel Syrup
3 drop Saline solution (20g sea salt to 80g water) or merest pinch of s
1⁄2 fl oz Double cream / heavy cream (chilled)

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of cocoa powder.

Method

  1. SHAKE first 5 ingredients with ice.
  2. FINE STRAIN into chilled glass.
  3. Whip or shake cream to aerate then FLOAT in the centre of the cocktail.

  1. Dust with cocoa powder.
