Ingredients:
1 12 oz Del Maguey Vida Clásico Mezcal
12 oz Italicus liqueur
12 oz Gentian liqueur (e.g. Suze, Salers etc)
16 oz Honey syrup (3 parts honey to 1 water by weight)
× 1 1 serving

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of orange zest twist (skewered).
  3. STIR all ingredients with ice.
  4. STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).
  5. EXPRESS orange zest twist over cocktail, then roll and skewer for garnish.

Adapted from a recipe created in 2025 by Aaron Sanchez at Lady Jane cocktail bar in Denver, Colorado. Named after Don Quixote's horse in Miguel de Cervantes' 1605/1615 novel Don Quixote.

This is absolutely superb - worth making the honey syrup just for this cocktail. The balance of smoky, bitter, citrus and sweet makes for a cocktail that is entirely unexpected. May be a new favourite!
