Ingredients:
1 16 oz Light gold rum (1-3 year old molasses column)
1 16 oz Pineapple juice
56 oz Sauvignon blanc wine
12 oz Lime juice (freshly squeezed)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of mint sprigs.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with mint sprigs bouquet pegged to rim.

The drink on its own is okay. With some chicken dishes (sauvignon blanc paired well with chicken dishes based on some website), the drink went on another level and tasted really fresh.

This cocktail got applause from my guest. Next time I will try to exchange the quantities of pineapple juice and sauvignon blanc to get an even better balance.
