Glass:

Ingredients:
1 23 fl oz Light gold rum (1-3 year old molasses column)
12 fl oz Difford's Falernum liqueur
12 fl oz Lime juice (freshly squeezed)
1 barspoon Powdered sugar (white sugar ground in mortar and pestle) optional
13 fl oz Chilled water
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of lime wedge.

How to make:

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish:

  1. Garnish with lime wedge.

I had a little leftover honey syrup so I used that instead of the spoonful of sugar. I should have also toned back the falernum or upped the rum + lime in response. But otherwise, the honey added an extra flavor complexity that I really enjoyed!

Having recently visited Barbados and picked up some Bajan rum, I had to give this another go (for science!) and have to say its superb with Four Square rum.

Simon, it is interesting that you've stuck with a Cuban rum, rather than a Bajan rum. Is there a specific reason for that?

Hi Simon, Thanks for that. I did have Havana Club in my rums. I've removed it and the recipe is now selecting Veritas, although the "buy direct from Diffords Guide" is still showing Havana Club, but that's fine. Thanks for solving the mystery.

Great. Left out the optional powdered sugar, and it was delightfully tart. Everything was in balance. Went wonderfully with dinner.

Very good cocktail! I used Bitter Truth Falernum and as it is quite intense a bit more (6cl) Havana Club 3Y which came out very balanced.

Made with Difford's Falernum and ripe limes I like as is but I can see some may like as 5ml 2:1 or 7.5ml 1:1 sugar syrup or even more. However, better with powdered sugar so I have added 1 spoon of this as an option. Many thanks for your feedback.

Zaya 16 and Falernum No 9 was just too much. Mad flavorful, but taxing. But it's what I had and I'll surely revisit many times to test rum brands. Great ratio.

Really enjoyed this cocktail. However I suspect that the picture you show on this page isn’t the correct picture. Veritas is light coloured, as is falernum.
