Serve in a Collins glass

Ingredients:
2 oz Light gold rum (1-3 year old molasses column)
12 oz Jamaican-style overproof aged pot still rum
2 12 oz Pineapple juice
14 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
2 dash Angostura Aromatic Bitters
12 oz Lime juice (freshly squeezed)
× 1 1 serving

How to make:

  1. Select and pre-chill a Collins glass.
  2. Prepare garnish of pineapple wedge & Luxardo Maraschino Cherry.
  3. SHAKE all ingredients with ice.
  4. STRAIN into ice-filled glass.

Gave me an opportunity to use some of my rum. Used Denizen 8 year and Lemon Hart 151. Omitted the sugar syrup entirely as our pineapple juice is very sweet.
Cocktail had a definite Caribbean hint and you could taste the rums. Perfect on a hot, late summer night.

did 50 ml malibu and 20 overproof room instead, subbed 7.5 ml simple syrup for 15 ml agave syrup, not sure what the heck i made but is damn good ;)

Mildly boozy but refreshing. This is a very good way to feature the funky Smith & Cross in a balanced way, though I used 1/4 oz. instead of 1/2 oz. and it was plenty. Was using Plantation 5 yr. instead of Bacardi, too.
