1 23 fl oz Oude genever
23 fl oz Cherry (brandy) liqueur
23 fl oz Lime juice (freshly squeezed)
13 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
1 dash Angostura Aromatic Bitters
23 fl oz Chilled water/mineral water (omit if using wet ice)

How to make

Glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of orange zest twist.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish

  1. EXPRESS orange zest twist over the cocktail and use as garnish.

History

In August 2009, Cherry Heering, a liqueur from Copenhagen, challenged local bartenders to create a signature cocktail for their city. This winning recipe was created by Gromit Eduardsen at Bar 1105 in Copenhagen, Denmark.

Review

Bready notes in the genever combine with the cherry brandy and the lime juice to produce a complex bittersweet, jammy cocktail.

I didn't think I would be able to concur with the bready and jammy notes review but I absolutely do. It obviously doesn't have the texture of bread but upfront it actually kind of tastes like a piece of toast with some sour cherry jam. Very nice cocktail indeed!

Maybe I should mention that Lommebogen with some cocktail written down by Axel Sørensen in the late 1930s wasn't published until Dec 2013 by Henrik Steen Petersen. And that only part of the new book can be read online (but including recipe for Copenhagen cocktail 1939 and others)

The is an older variant "Copenhagen Cocktail 1939" from Axel Sørensen's black, bar notebook: 22.5 ml. Beefeater Gin, 22.5 ml Cherry Heering, 22.5 Dolin Rouge Vermouth, approx. 2 dash lemon juice + 1 dash stron sugar syrup, 1 dash Angostura Bitters. Can be read on issuu.com ("Lommebogen" ISBN 978-87-995886-0-2, in Danish only, published by Henrik Steen Petersen from the former "Moltkes Bar" in Copenhagen)
