34 oz Amaro Nonino Quintessentia
12 oz Batavia Arrack van Oosten
12 oz Poire William eau-de-vie
12 oz Strucchi Dry Vermouth chilled
34 oz Strucchi Rosso Vermouth chilled
1 dash Peychaud's or other Creole-style bitters
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of pear wedge.

How to make:

  1. STIR all ingredients with ice.
  2. STRAIN into chilled glass.

  1. Garnish with pear wedge on rim.

Fascinating spec that has a very complex and delicious spiced pear taste. Great (and rare for me) use of batavia arrack where it harmonizes with the bitters/vermouths. Curious how it differs from Phil Ward's original spec but is excellent on its own merits. May try to make this equal parts plus the bitters and see how that compares.
