3 dash	La Fée Parisienne absinthe
2 fl oz	Hayman's London Dry Gin (infused with Earl Grey tea)
¹⁄₂ fl oz	Gentian liqueur Gentian liqueur (e.g. Suze, Avèze, Salers)
¹⁄₂ fl oz	Strucchi Dry Vermouth
¹⁄₂ fl oz	Cointreau L'Unique triple sec liqueur
¹⁄₃ fl oz	Honey syrup (3 parts honey to 1 water by weight)

How to make

Glassware

Serve in a Coupe glass

Prepare

Select and pre-chill a COUPE GLASS.
Prepare garnish of lemon zest twist (flamed).

Method

RINSE chilled glass with absinthe, discard excess and set aside.
STIR other ingredients with ice.
STRAIN into absinthe-rinsed glass.

Garnish

EXPRESS flamed lemon zest twist over cocktail and use as garnish.

Mmm, I do like this, but it's too sweet. Made it with Salers, which seems to be the perfect brand. And, I must confess, the vermouth was Noilly Prat dry and the triple sec Luxardo Triplum (which I'm only now starting to find to be a touch too sweet after a few years of loving it).
