Ingredients
2 fresh Strawberries (hulled, small & ripe)
1 12 fl oz Ketel One Vodka
12 fl oz Lemon juice (freshly squeezed)
12 fl oz Honey syrup (3 parts honey to 1 water by weight)
12 fl oz Egg white (pasteurised) or 3 dash Fee Brothers Fee Foam cocktail foamer

How to make

Glassware

Serve in a Coupe glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish balsamic vinegar and ground black pepper.

Method

  1. MUDDLE strawberry in base of shaker.
  2. Add other ingredients, SHAKE with ice and strain back into shaker.
  3. DRY SHAKE (without ice) to emulsify.
  4. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with 5 drops balsamic vinegar and dust with freshly ground black pepper.

Rarely comment despite constant use of the site but this is phenomenal. And I say that as someone who likes boozy drinks with no citrus (other than garnish) and who actively dislikes fruity things and vodka cocktails. The balsamic was revelatory. Didn't measure 5 drops as intended. Just came out in a small stream with my finger over and then incorporated with a cocktail stick. Pepper and balsamic would seem to be underutilised in the cocktail world after this.

Delicious and light. I happened to have a nice white balsamic that I used for this, and I'd suggest to anyone thinking of doing the same that you could increase the amount per glass significantly to compensate for the lighter flavor.

Lite, refreshing, satisfying, Strawberry. I needed a 1 turn stir after adding the balsamic as mine settled to the bottom. The drink did not last long in the glass.
