2 fl oz Ketel One Vodka
1 fl oz Pineapple juice
12 fl oz Lime juice (freshly squeezed)
13 fl oz Giffard Caribbean Pineapple liqueur
13 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
3 drop Tiki bitters

How to make

Glassware

Serve in a Martini glass

Prepare

  1. Select and pre-chill a MARTINI GLASS.
  2. Prepare garnish of pineapple wedge.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with pineapple wedge on rim.

I went with a variation on the approach from Laurent but used grapefruit bitters instead which I think cut the sweetness just enough. Delicious and refreshing at the same time. Will try the rum version next time.

I went a bit cheffy with this cocktail (very nice btw) and chargrilled my pineapple garnish (with one of those kitchen blowtorches) and placed it in the drink instead of the rum. Gave it a nice subtle smokiness to the drink which really set it off nicely.

Très bon cocktail ! Je n'avais pas de liqueur d'ananas ni d'amer tiki, j'ai donc remplacé ces deux ingrédients par une liqueur de sureau(St Germain) & trois tirets d'angostura.
