Ingredients:
2 oz Hayman's London Dry Gin
12 oz Lime juice (freshly squeezed)
14 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
14 dash Angostura Aromatic Bitters
7 dash Peychaud's or other Creole-style bitters
7 dash Orange Bitters by Angostura

Prepare:

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of lime wedge.

How to make:

  1. SHAKE all ingredients with ice.
  2. STRAIN into chilled glass (no ice in glass).

Garnish:

  1. Garnish with lime wedge on rim.

Adapted from a recipe created in 2010 by Don Lee in New York City. First made for WD-50 chef, Wylie Dufresne, and is named after his daughter.

This is one of those drinks where I really wanted to be harsh and criticise the gin because it doesn't show up but it does in the end. It adds a certain freshness that vodka and glycerin water can't add. It certainly straddles the line though. It's mostly bitters forward — Ango, Peychauds and Orange all show up — but it kind of falls flat on not feeling like a *cocktail*. All the ingredients make themselves known but they're all independent, not contributing to the overall drink. It's still a 4/5 because it's well balanced and well worth serving. It's just not better than the other Ango heavy drinks.

The Sawyer feels like a missed opportunity. With three bitters and gin’s botanicals, it should sing, but it falls flat—complexity without harmony, leaving the drink underwhelming.

That's an amazing cocktail, bitter yet tasteful.

I love this one! It's very complex and not nearly as bitter as I expected. The cardamom of the Ango tends to dominate the other bitters so I might try cutting that back a bit next time.
