My friends and I have been on an Industry Sour kick as winter winds down.

But, with Green Chartreuse in short supply, we have been experimenting with other herbal liqueurs. Here are our results:
Strega - 4.5/5
CioCaro - 4.5/5
Cardamaro - 4.5/5
Nonino - 4/5
Galliano - 4/5
Suze - 4/5

No Green Chartreuse, so I subbed Strega.

This is a fantastic cocktail. Now I want to try other herbal liqueurs and see how they hold up.

Hmmm, I used Del Maguey’s Vida Clásico, but the Lucano’s sweetness totally overwhelmed the Mezcal’s smokiness.

I’ll give a milder amaro a try, because this drink has everything I normally like.

I tried this with the original recipe and…wow…was it sweet.

I subbed Montenegro for Averna, but I find those two have a similar ‘sweet’ profile as far as amari go.

Granted the dry/sour rating is for Difford’s recipe, but that original recipe is *way* sweeter than what I anticipated.

So. the drink in the image is pale. I made this last night and the ruby port tinged the entire cocktail mauve. It wasn’t off putting, and even looked more ‘Christmasy’ - but I’m curious how you keep it pale.

This is amazing! Lovely smokiness on the nose, and very well balanced. Used Carpano Antica instead of Punt e Mes

I agree!

I also used Carpano Antico and find this to be a wonderfully balanced cocktail. The Luxardo and Mezcal work beautifully together.

Agreed re nixing sugar syrup. I subbed V8 and added a skosh of horseradish. I very much like the addition of the amontillado sherry.

We’ll see how the Easter crowd takes to it.

PS very glad for the servings feature allowing more than 4…my math is crap. ?
