Glass:

Serve in a Pineapple shell (frozen) glass

Ingredients:
1 whole Pineapple (fresh)
3 fl oz Light gold rum (1-3 year old molasses column)
34 fl oz Lime juice (freshly squeezed)
12 fl oz Superfine/Caster/Baker's special sugar (white)
× 1 1 serving

Prepare:

  1. Select and pre-chill a PINEAPPLE SHELL (FROZEN) GLASS.
  2. Cut the top off a small pineapple and carefully scoop out the flesh from the base to leave a shell with 12mm (½ inch) thick walls. Place the shell in a freezer to chill.
  3. Cut a straw sized hole in the sliced off top of the pineapple shell for use as a lid.

How to make:

  1. Remove the hard core from the pineapple flesh and discard; roughly chop the remaining flesh, add other ingredients and BLEND with one 12oz scoop of crushed ice.
  2. POUR into the pineapple shell. (The flesh of one pineapple blended with other ingredients will fill two shells.)

Garnish:

  1. Serve with a straw.

History:

Adapted from David Embury's 1948 The Fine Art of Mixing Drinks. Pronounced 'Ah-bah-Kah-shee Rich-kah-So', the Portuguese name of this Brazilian drink literally translates as Extra Delicious Pineapple.

Pineapple decorer/slicer ftw! Looks amazing, and dangerously refreshing.
Recommend fixing the 'lid' with two toothpicks or cocktail skewers to the pineapple body.

As others have said, use a pineapple de-corer tool and this is a piece of cake to make. Delicious summer cocktail, dangerously easy to drink.

Would probably be good with a coconut rum?

I have a pineapple de-corer slicer. Made the prep to this absolutely no problem.

Drink tastes great and it’s a real centrepiece whenever had

Using a homemade sharpened spoon, it took less than four minutes to hollow out the pineapple. That made it much less of a hassle.
I also added some passion fruit syrup, and it didn't make it any less delicious...
