Glass:

Ingredients:
1 12 fl oz Patrón Silver blanco tequila
34 fl oz Cointreau triple sec liqueur
34 fl oz Lime juice (freshly squeezed)
12 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
14 barspoon Xanthan gum (E415) optional
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of lime slice wheel.

How to make:

  1. DRY BLEND (without ice) first 4 ingredients (all but Xanthan gum) on a slow setting and then gradually add Xanthan while continuing to blend.
  2. Add 7oz scoop of crushed ice and BLEND some more.
  3. POUR into chilled glass.

Garnish:

  1. Garnish with lime slice on rim.

Delicious, and the amount of ice is perfect, IMHO. I used Tajín to season half of the brim, which I prefer to salt.

I would never use simple syrup in a Margarita - subbed with agave, but I would probably ease off to 10 ml with it... I used Lunazul and Luxardo Triplum and just did a shake and dump with ice crushed in a Lewis bag. The specs here are pretty spot on. A crowd pleaser.

Question? Shoudent have more Tequila than a regular (shaked) Margarita? Ice reduces the alcohol perception and frozem dooms the sweeteness perception. Right?

For individual servings, you can use an immersion blender. You will need to crish the ice more finely using a lewis bag or similar though.
