How to make:
SHAKE all ingredients with ice and strain into ice-filled glass. (There's no need to dry shake this cocktail as the egg white is included to round and add mouthfeel rather than to create a thick frothy head. A good 'wet' shake should create enough foam.)
1 1/2 fl oz | Patrón Silver blanco tequila |
1/3 fl oz | Triple sec liqueur (40% alc./vol.) |
1/3 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°brix) |
1/3 fl oz | Lime juice (freshly squeezed) |
1/6 fl oz | Lemon juice (freshly squeezed) |
1/6 fl oz | Pasteurised egg white (or aquafaba) |
1/6 fl oz | Chilled water |
4 drop | Difford's Margarita Bitters |

Review:
Being slightly dilute, faintly sweet and with a thin foam on top are all essential components to a really good Trashy Margarita. This has all the good characteristics of a powdered sour-mix margarita but with fresh ingredients.
