Ingredients:
1 12 oz Light white rum (charcoal-filtered 1-4 years old)
12 oz Light gold rum (1-3 year old molasses column)
34 oz Lime juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
8 drop Difford's Daiquiri Bitters
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lime zest twist.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.
  6. Express lime zest twist over the cocktail and use as garnish.

Wonderful. I didn’t have the Daiquiri bitters but added 4 drops each of Abbotts and Lavender and still does the trick for me…

This is exceptional. Citrus forward but with a definite taste of the rums. Great mouth feel and creaminess. A perfectly blending of two of our favourite cocktails. Thanks Simon, another hit.
