Serve in a Snifter/Brandy balloon glass

Ingredients:
14 oz Green Chartreuse (or alternative herbal liqueur)
1 12 oz Rémy Martin V.S.O.P. cognac
34 oz Nux Alpina Walnut Liqueur
12 oz Cockburn's Tawny Eyes Port
× 1 1 serving

Prepare:

  1. Select a SNIFTER/BRANDY BALLOON GLASS.
  2. No garnish to prepare.

How to make:

  1. POUR liqueur into pre-warmed glass then tilting and rotating to coat the inside with the liqueur.
  2. DISCARD excess liqueur.
  3. Carefully IGNITE liqueur inside the glass and allow to burn for a few seconds before extinguishing flame by placing a saucer over the glass.
  4. Add other ingredients.

Garnish:

  1. Serve without garnish but tell drinker to beware of hot glass rim.

A fabulous cocktail, especially when VEP Chartreuse, family reserve cognac and a 20-year-old tawny port are used, as per the original Starlight Room recipe.

Adapted from a recipe created in 2005 by Jacques Bezuidenhout at Harry Denton's Starlight Room in San Francisco, California.

  • 32.5% alc./vol. (32.5° proof)
  • 29.3 grams of pure alcohol

Sophisicated. I replaced cognac with Metaxa and it’s fit perfect

What is the effect of the Chartreuse burn? Presumably it releases some alcohol and warms the glass. But beyond that is it pure theatrics or ritual? Or is the taste of the Chartreuse modified? Anyway, the perfect drink over which to contemplate the idiocies committed during one's life and conclude that, after all, little lasting harm was done. And over a second drink one might imagine the angels concurring, in their benevolence.

Had this as an after-dinner drink on Valentine's Day and it was absolutely perfect. Warm and the flavours were unbelievable. Will make this again, but may try other nut liqueurs. Outstanding.
