Ingredients
3 slice Fresh ginger root (thumbnail-sized slice)
12 fresh Mint leaves
2 fl oz Light white rum (charcoal-filtered 1-4 years old)
12 fl oz Lime juice (freshly squeezed)
12 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
3 fl oz Thomas Henry Ginger Ale

How to make

Serve in a Collins glass

Prepare

  1. Select and pre-chill a COLLINS GLASS.
  2. Prepare garnish of mint sprigs.

Method

  1. MUDDLE ginger in base of shaker.
  2. Add mint and lightly MUDDLE (just to bruise).
  3. Add next 3 ingredients and SHAKE with ice.
  4. FINE STRAIN into glass filled with crushed ice.
  5. TOP with ginger ale and briefly stir.

Garnish

  1. Garnish with mint sprigs bouquet.

Made a few modifications. It wasn't as ginger forward as I would prefer on first taste. I reduced the simple syrup a bit and added about 1 oz ginger liqueur. Finished it off with ginger beer instead of ginger ale. It was super refreshing and had a more complex flavor.

What in the world? There is absolutely no taste of the rum in this, and I used Havana Club 3! A delicious and potent combination of ginger, mint and lime. I did overpour my ginger syrup (in place of a packaged ginger ale), so it did dominate, but tasty nevertheless.
