Serve in an Old-fashioned glass

Ingredients:
2 oz Straight rye whiskey (100 proof /50% alc./vol.)
14 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
1 dash Underberg/ Brasilberg
× 1 1 serving

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of lemon zest twist.
  3. STIR all ingredients with ice.
  4. STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).
  5. EXPRESS lemon zest twist over the cocktail and use as garnish.

Adapted from a recipe in Albert Stevens Crockett's 1931 book Ol Waldorf Astoria Bar Days:

One-fourth lump Sugar dissolved in one-half pony of Water
Dash of Boonekamp Bitters
One jigger Whiskey
One piece twisted Lemon Peel
"

What are today called Underburg bitters were originally called Underburg Boonekamp Bitters and "One-fourth lump Sugar dissolved in one-half pony of Water" is simply sugar syrup.

  • 23.8 grams of pure alcohol
