1 2⁄3 fl oz Spiced rum
5⁄12 fl oz Lime juice (freshly squeezed)
1⁄4 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
2 1⁄2 fl oz Thomas Henry Ginger Beer

How to make

Glassware

Serve in a Copper mug or Collins glass

Prepare

  1. Select and pre-chill a COPPER MUG OR COLLINS GLASS.
  2. Prepare garnish of lime slice and mint sprigs.

Method

  1. POUR first 3 ingredients into mug/glass.
  2. Briefly STIR.
  3. Fill glass two-thirds full with cubed ice.
  4. TOP with ginger beer and fill glass with a crown of crushed ice.

Garnish

  1. Garnish with lime slice and mint sprigs bouquet.
  2. Serve with a straw.
