How to make:
SHAKE all ingredients with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass.
1 1/2 fl oz | Rutte Dry Gin |
3/4 fl oz | Italian red bitter liqueur |
1 fl oz | Montenegro amaro |
3/4 fl oz | Lemon juice (freshly squeezed) |
1/4 fl oz | Orange juice (freshly squeezed) |
1/6 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°brix) |
1/2 fl oz | Pasteurised egg white (or aquafaba) |

Perhaps more an Amaro Sour than it is a Negroni Sour but this a very tasty bittersweet aperitivo nonetheless.
