Ingredients:
0.04 oz La Fee Absinthe Blanche
1 12 oz Caribbean blended rum aged 6-10 years
1 oz Hampden Estate Overproof Rum
12 oz Difford's Falernum
13 oz Monin Cinnamon Syrup (US)
12 oz Pink grapefruit juice (freshly squeezed)
12 oz Lime juice (freshly squeezed)
1 dash Angostura Aromatic Bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of grapefruit zest twist and lime wedge.
  3. RINSE glass with absinthe and discard excess.
  4. SHAKE other ingredients with ice.
  5. FINE STRAIN into absinthe-rinsed glass.
  6. EXPRESS grapefruit zest twist over cocktail and discarded.
  7. Garnish with lime wedge on rim.

This riff on Donn Beach's classic Zombie has a tad more gentlemanly refinement in its serve but doesn't hold back in flavour.

1.25 of the ST. George Absinthe overpowered the taste for me. I would maybe spray it instead. Overall good drink!

You're supposed to just rinse the glass with the absinthe, with just enough to roll it around and coat the surface, and then pour out any extra.

Being big rum drinkers, loved this. Didn't had the cinnamon sugar syrup, but substituted a little Goldschlager and sugar syrup. Still a bit sweet, but would make again, but may omit the syrup (keeping the Goldschlager). Really liked as you can taste the rum which is not the case in many tiki drinks. Was originally drawn to this cocktail based on its name. Definitely on my favourites.
