Serve in a Coupe glass

Ingredients:
2 oz Rémy Martin V.S.O.P. cognac
12 oz Honey syrup (3 parts honey to 1 water by weight)
1 oz Single cream/half-and-half
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of chocolate powder.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with a dusting of chocolate powder.

This is way out of my wheelhouse, still, I have to admit it's a gorgeous, velvety drink. I may have overdone it a bit with the cocoa powder but I'm not complaining.

I made the cocktail and added two dashes of Angostura Cocoa bitters before shaking and I find it really brought it together nicely. :) I have one question though: I have coupes that are the proper size described in the recipe but my finished cocktail barely made it halfway up :( . Did anyone experience this as well?

Finding the perfect capacity glass for each cocktail is a task, and most modern coupes are a little on the large side. The ingredients total 105ml plus 36% dilution from shaking with ice = 143ml. A 7-oz coupe glass has a capacity of 200ml to the rim, so it would be 70% (roughly 2/3rds) full. If you are not achieving roughly this capacity, then perhaps your ice needs to be left to temper, and/or a more vigorous shake is required.

Absolutely true. The fruitiness of the Brandy really shines more in this drink.
