Serve in a Martini glass

Ingredients:
2 12 oz Light white rum (charcoal-filtered 1-4 years old)
34 oz Lustau Jarana Fino Sherry
14 oz Luxardo Maraschino liqueur
14 oz Lemon juice (freshly squeezed)
14 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
1 dash Angostura Aromatic Bitters
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

How to make:

  1. Select and pre-chill a Martini glass.
  2. Prepare garnish of orange zest twist and Luxardo Maraschino Cherry.
  3. SHAKE all ingredients with ice.
  4. STRAIN back into shaker.
  5. DRY SHAKE (without ice) to emulsify.
  6. FINE STRAIN into chilled glass.
  7. Express orange zest twist over cocktail and discard. Garnish with maraschino cherry.

History:

Adapted from a drink created in 2008 by Scott Ingram at MC Bar, Abode Hotel in Glasgow, Scotland. The name is a reference to the year when Facundo M. Bacardi established his first distillery.

Very disappointed with this drink. Didn’t get any real flavour from it, just a bland and uninteresting but very alcoholic combination. Was expecting a lot more.

Bon cocktail.

Robe orangée et mousse épaisse et persistante.

Arômes très discrets de citron.

Douceur en bouche de la canne à sucre vite mélangée à une petite acidité liée au citron et au Sherry.

Finale portée sur les agrumes.
