History

Adapted from a recipe created by Audrey Saunders in 2003 at Beacon restaurant in New York City, USA.

Review

As the name implies, this Martini is a good helping of smoky peat. And, if you like that kind of thing, it's equally dreamy.

The lemon twist is crucial.
FYI, your book(s) show 15ml Pernod.

Thanks, Jeremy. Your bringing this to my attention led me to revisit the recipe - I've cut the measure of peated whisky by half and upped the Pernod to half a bar spoon. I've also made a note to address in the 18th edition of our book.
