Serve in an Old-fashioned glass

Ingredients:
2 oz Irish whiskey
34 oz Lemon juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
1 pinch *Special ingredient #1 (see above)

Garnish: Pickle salt rim & pickle spear

How to make:

SHAKE all ingredients with ice and strain back into shaker. DRY SHAKE (without ice) and strain into ice-filled glass. Special ingredient #1: Pickle Salt - 500g Fine Sea Salt - 20ml Pickle Juice Add pickle juice to salt, break up any lumps, store in Kilner jar.

Review:

An Irish Whiskey Sour made special and distinctive by a salty pickle influence. So much better than a Pickle Back and as it's from Mojo, much more rock and roll.

Tried this just because I wanted something with Irish Whiskey and it sounded a bit odd. I am so glad we had this. It is outstanding. The salt and pickle juice adds an interesting character. Everything works together well to produce a smooth and flavourful cocktail. The pickle garnish enhanced the experience.

This is a surprisingly smooth and tasty drink! I don't think it needs the pinch of pickle salt in the drink if the rim is well coated though. I didn't have a dill pickle/gherkin to hand but a pickled asparagus spear worked perfectly as a garnish.
