Serve in a Coupe glass

Ingredients:
1 12 oz Hayman's London Dry Gin
34 oz Strucchi Red Bitter (Campari-style liqueur)
12 oz Lemon juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative
1 dash Orange Bitters by Angostura
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.
  6. EXPRESS lemon zest twist over the cocktail and use as garnish.

Even with Aquafaba, this drink is decent.

This cocktail is a great example of squisite balance, with none of the elements (spirit, sour and sweet) prevailing over the others, but all are clearly there. Delicious.
Notes: I have abundantly expressed the lemon peel on the rim of the coupe, and then speared it on a pick so it could hang above the foam, which provided an intense lemon kick to the nose. Also, lacking orange bitters, I used a mix of Angostura bitters and homemade grapefruit tincture.

Very satisfying drink. Love the colour. Next time I might try increasing lemon and/or decreasing sugar.

Also, do my eyes deceive me, or is that an orange zest in the image?

Very nice! Still on the bitter side even with the 1/2 oz of sugar syrup.
