Serve in a Coupe glass

Ingredients:
3 whole Green cardamom pods
1 23 oz Absolut Vanilia Vodka
1 oz White crème de cacao liqueur
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

Garnish: Dust with chocolate powder &/or crumbled Cadbury's Flake bar, & mini chocolate eggs in orange zest nest on rim.

How to make:

MUDDLE cardamom pods in base of shaker. Add other ingredients, SHAKE with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass.

History:

Created in 2003 by Simon King at MJU Bar, Millennium Hotel, London, England. The egg white was our addition to Simon's recipe - it seemed appropriate to add egg given this is an Easter cocktail. We also added the orange zest nest of chocolate eggs.

Super delicious cocktail. Perfect for an Easter treat! Would love a Difford's Guide guide to garnishes... My orange zest nest looked great for a quick photo, but the mini eggs quickly landed in the bottom of the glass :-D Happy Easter!! (Easter cocktail)

Making the orange zest nest is a faff but made easier by skewering with a wooden cocktail stick.

Careful not to muddle the three cardamom pods too much... which I clearly just did and it's almost undrinkable :(

I don’t buy vanilla vodka, so I used unflavored vodka and subbed in vanilla sugar for the simple syrup. Worked quite well!

Wow! A fantastic dessert cocktail! The egg white adds just enough richness without getting too creamy. The cardamom comes through so well to cut through any rich flavours. And the vanilla and chocolate just combine so beautifully. I think it's a must for an Easter cocktail.

Very nice. Sweet but not too much. I swirled some Cardamom Bitters in the glass before pouring.

In the book it says to use vanilla infused vodka. Is this a typo on the site?

Hi Mark. Works with both flavoured and unflavoured vodka but vanilla amplifies the chocolate so I have amended the recipe above accordingly. Many thanks for bringing to my attention.
