- Select and pre-chill a Coupe glass.
- Prepare garnish of fresh ginger & lemon slices.
- SHAKE all ingredients with ice.
- FINE STRAIN into chilled glass.
1 2/3 fl oz | Rémy Martin V.S.O.P. cognac |
1/2 fl oz | Ginger liqueur |
1/2 fl oz | Suco fresco de Limão Siciliano |
1/4 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) |
1 dash | Peychaud's or other Creole-style bitters |

The idea was to make a riff on an Aviation (see Biggles Aviation) but ginger cries out for cognac so I also ended up with this ginger Sidecar.
