13 fl oz Honey syrup (3 parts honey to 1 water by weight)
2 dash Pimento bitters
2 drop Saline solution (20g sea salt to 80g water) or merest pinch of s

Serve in an Old-fashioned glass

Method

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. STIR all ingredients with ice.
  3. STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).
  4. (No garnish.)

Quite good. I dialed back the honey syrup on my second mix and found it more to my taste.

This looked really sweet as written so I cut back a bit on the honey and used a 2:1 ratio of rye:amaro. Good, and still plenty sweet. I'm surprised to see it labeled an "Old Fashioned" since it's very similar to both the Black Manhattan and the Monte Manhattan, with Angostura replaced by pimento bitters (I used pimento dram).

I like the rye base, but found the cocktail overly sweet - I think I might dial back the honey syrup some. It was too much like candy for me.

This was excellent. The saline solution does help pull out more flavours of the cocktail. The spiciness of the rye shines in this cocktail. On my favourites.

The salt is what makes a difference in this fabulous cocktail. Didn't have pimento bitters so I ground allspice with sea salt in a mortar and added a bit of hot water to get the flavours extracted. Used the finely strained mixture in place of bitters and saline solution.
