Ingredients
1 1⁄2 fl oz Blanco tequila
1⁄2 fl oz Cointreau L'Unique triple sec liqueur
1⁄2 fl oz Lime juice (freshly squeezed)
1 fl oz Pineapple juice
1⁄6 fl oz Monin Pineapple Syrup (optional)
2 drop Saline solution (20g sea salt to 80g water) or pinch of salt

How to make

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. RIM glass with Tajín seasoning (moisten outside edge with lime or orange juice and drip into Tajín).
  3. Prepare garnish of pineapple wedge.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with pineapple wedge on rim.

I did it with Blanco Tequila Tradicional. But couldn't resist the tentation: fire tincture - scrappy's bitters, and black chile salt in the glass rim. Very surprising since we are used to the Tamarindo and sometimes de Maracuya Margaritas, but never Pinne aple.

I'm wondering why most margarita recipes call for reposado tequila but this one specifies blanco.

I am partial to blanco myself for most tequila cocktails, but would this one be terrible with repo?

Some cocktails benefit from the rounder, delicate vanilla note of a reposado. However, the choice between blanco and reposado tequilas is a matter of personal taste, and most cocktails, including this one, will work with either.

Pleasant pineapple cocktail. Did add a few drops of Margarita bitters to give it a few more flavours and cut the sweetness of the pineapple juice (it's pineapple season in Southern California and they are very ripe and sweet).
