Pineapple Mojito

Serve in a Collins glass

Ingredients:
12 fresh Mint leaves
2 oz Light white rum (charcoal-filtered 1-4 years old)
34 oz Licor 43 Original liqueur
2 oz Pineapple juice
1 oz Lime juice (freshly squeezed)
× 1 1 serving
Read about cocktail measures and measuring

How to make:

  1. Select and pre-chill a Collins glass.
  2. Lightly MUDDLE mint (just to bruise) in glass.
  3. Add other ingredients.
  4. Two-thirds fill glass with crushed ice and CHURN with barspoon.
  5. Fill glass with more crushed ice and briefly CHURN.
  6. Serve with a straw.

Agreed that licor 43 is quite subtle. I wouldn’t recognize it there

We drink a lot of rum and tiki cocktails, but do not like them too sweet. This was a very nice and refreshing cocktail, but the combination of the Licor 43 and pineapple juice made it a bit sweet.
After tasting added my standard rum cocktail fixing ingredient - 151 proof Demerara rum. Added about between 1/2 and 1/2 oz. Helped to calm the sweetness and added a more tropical rum taste to the cocktail.

Delicious. Licor 43 was very subtle so might try adding a bit more next time.

A really nice twist on a mojito. The 43 gives a nice vanilla aftertaste.

Added about .25-.5 oz of 1:1 demararra syrup for a bit more of a vacation vibe. This is getting great reviews rn with our crowd.

I too thought it would benefit from maybe a tsp of demararra.
