Ingredients:
1 12 oz Patrón Silver blanco tequila
23 oz Pallini Limoncello liqueur
12 oz Lemon juice (freshly squeezed)
13 oz Honey syrup (3 parts honey to 1 water by weight)
3 drop Saline solution 4:1 (20g sea salt to 80g water)
13 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of coin-sized lemon zest twist.
  3. DRY SHAKE all ingredients (without ice) to emulsify.
  4. SHAKE again with ice.
  5. FINE STRAIN into chilled glass.

Love this drink. Love the name (I am also John in California). It is a perfect marriage of ingredients blending to form a slightly tart cocktail. Each ingredient shines at some point and then the next flavour comes.
Great alternative to the traditional tequila cocktails. Going on my favourites.

This is quite a mouthful - first hit is all that lemon but tempered with the honey smooth and slight sweetness (honey may vary).
After a while the smoky mezcal kicks in and then you realise its all gone and you need another.
