Ingredients:
2 oz Patrón Reposado tequila
1 oz Lime juice (freshly squeezed)
12 oz Agave syrup
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
4 drop Difford's Margarita Bitters optional
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of coin-sized lime zest twist.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice) to emulsify.
  5. FINE STRAIN into chilled glass.
  6. Express lime zest twist over the cocktail and use as garnish.

Review:

A Margarita without orange liqueur (e.g. a Tommy's Margarita) is not a "margarita" at all but a tequila sour. The triple sec orange liqueur is one of the things that define the margarita (which sits within the Daisy cocktail family). The Tequila Sour may lack the ring of a Margarita, but it is a very tasty cocktail nonetheless.

Okay, I get that this is a Tommy's Margarita + egg white - and it's balanced, because the Tommy's is delicious. But...something just isn't right with tequila and egg white. You sip it and you get that agave sour tang and then it's all silky and smooth and it's really quite odd. It's kind of unsettling.

Why sugar syrup and not agave syrup?
Enhance with margarita/lavender bitter

Indeed, why not? I've amended the recipe above accordingly. I've also changed to be served straight-up rather than on-the-rocks. (I'll re-photo ASAP.)

this one is really yummy. With the egg white, it's like a new experience matching with tequila. I tried with agave reposado and with blanco, both are good in my opinion
