Serve in a Coupe glass

Ingredients:
3 sprig Oregano (fresh)
1 23 oz Del Maguey Vida Clásico Mezcal
34 oz Yellow Chartreuse (or génépy liqueur)
16 oz Pastis
34 oz Lime juice (freshly squeezed)
16 oz Agave syrup
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of oregano sprig.
  3. Gently MUDDLE (just to bruise) oregano sprigs (stalks & leaves) in base of shaker.
  4. Add other ingredients and SHAKE with ice.
  5. FINE STRAIN into chilled glass.
  6. Garnish with oregano sprig.

History:

Created in the winter of 2008 by Jim Meehan, this recipe is from his 2011 The PDT Cocktail Book in which he says, "With the help of barman Euclides López, I fashioned a Mexican rendition of Audrey Saunders' French Pearl using two staples of Puebla Cuisine: mezcal and fresh oregano."

Use Siesta Misterios mezcal and Pastis 51 - oh this is so good. Needs a good shake down to get cold otherwise it will be drunk to quick.

I used absinthe instead of pastis. Absolutely delicious! So good I made it 2 days later.

mezcal x chartreuse bangs. pastis is a nice touch - only a tiny hint needed. nice last word alternative.

Really liked this, the mezcal and yellow chartreuse go really well together. Made this with absinthe rather than anis as that’s what I had
