Ingredients:
2 oz Akashi-Tai Daiginjo Genshu sake
34 oz Sauternes dessert wine chilled
14 oz Rémy Martin V.S.O.P. cognac
16 oz Torabhaig Peated Single Malt Whisky
2 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of dehydrated apple slice.
  3. STIR all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with dehydrated apple slice floated on cocktail.

I added 1/2oz simple syrup, a dash of saline and two drops of Japanese bitters and it's almost there! I'm thinking next time honey syrup maybe? Could complement the Sauternes, and also maybe up the scotch to 1/2oz to get more smoke.

This cocktail is almost good… a few tweaks to give it a bit more complexity may make it enjoyable. Thank you x

When i next open a bottle of Château d'Yquem 1945 ill give it a go ......or perhaps a Monbazillac might substitute in a pinch :)
