Ingredients:
2 oz Hayman's Old Tom Gin
0.08 oz Gomme syrup
0.04 oz Orange Curaçao liqueur
2 dash Boker's bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Nick & Nora glass.
  2. Prepare garnish of lemon zest twist.
  3. STIR all ingredients with ice.
  4. STRAIN into ice-filled glass.
  5. EXPRESS lemon zest twist over the cocktail and use as garnish.

History:

Adapted from a recipe in Jerry Thomas' 1887 Bar-Tender's Guide.

Gin Cocktail.
(Use small bar glass.)
Take 3 or 4 dashes of gum syrup.
2 dashes of bitters (Boker's).
1 wine-glass of Holland gin.
1 or 2 dashes of Curaçao.
Fill the glass one-third full of shaved ice, and strain into a cocktail glass. Twist a small piece of lemon peel, place it in the glass, and serve.

Old Tom Gin Cocktail.
Same as the foregoing, substituting Old Tom, instead of Holland Gin.

As an old fashioned romantic I enjoyed this very much. Things have come a long way, but have they really? Full of character and flavour. I had to make a half-serve, but it disappeared so quickly…!
