Ingredients:
2 oz Patrón Silver blanco tequila
34 oz Lime juice (freshly squeezed)
12 oz Monin Almond (Orgeat) Syrup
13 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative
6 drop Orange blossom water / Orange flower water
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of cinnamon powder.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice) to emulsify.
  5. FINE STRAIN into ice-filled glass.
  6. Garnish with a dusting of cinnamon powder.

Review:

A riff on a Margarita with orgeat replacing the usual orange liqueur, so disguising it with alluring almond/marzipan notes. Some versions call for rose rather than orange blossom water, but floral orange seems more appropriate than rose to replace the orange liqueur.

History:

Named after Mexican actor and singer Pedro Infante Cruz (1917-1957), who acted in more than 60 films and recorded over 350 songs.

Adapted from a recipe created in 2009 by Giuseppe González at Dutch Kills bar in Long Island City, New York City. I added a splash of egg white and switched from nutmeg to cinnamon for the garnish in January 2025 after enjoying an Infante at Pictura in the Mandarin Oriental Ritz, Madrid, Spain.

I tried that one with rose water and its very ellegant. On top a bit of nutmeg powder. On the sweet side. Not for every body but i think its an underrated cocktail. I Will also try it changing orgeat syrup for falernum syrup.

Agreed, this is a bit of a meh cocktail for me. I wanted to like it, but it seemed to be missing something.
