Recipe contains the following allergens:
A riff on a Margarita with orgeat replacing the usual orange liqueur, so disguising it with alluring almond/marzipan notes. Some versions call for rose rather than orange blossom water, but floral orange seems more appropriate than rose to replace the orange liqueur.
Named after Mexican actor and singer Pedro Infante Cruz (1917-1957), who acted in more than 60 films and recorded over 350 songs.
Adapted from a recipe created in 2009 by Giuseppe González at Dutch Kills bar in Long Island City, New York City. I added a splash of egg white and switched from nutmeg to cinnamon for the garnish in January 2025 after enjoying an Infante at Pictura in the Mandarin Oriental Ritz, Madrid, Spain.
