Ingredients:
1 23 oz Akashi-Tai Daiginjo Genshu sake
12 oz Del Maguey Vida Clásico Mezcal
12 oz Italicus liqueur
4 drop Difford's Margarita Bitters
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Nick & Nora glass.
  2. Prepare garnish of lime zest twist expressed and used as garnish (affix to rim rather than float to ensure lime doesn't overpower this delicate cocktail..
  3. Prepare garnish of lime zest twist.
  4. STIR all ingredients with ice.
  5. STRAIN into chilled glass.
  6. EXPRESS lime zest twist over cocktail and use as garnish. (Affix to rim rather than float to ensure lime doesn't overpower this delicate cocktail.)

The sake I had on hand was not very acidic so I decided to add three drops of lime juice. That honestly transformed the cocktail so much. It never became sour obviously but it tempered the mezcal a bit and brought forward the sake, and especially the floral components in the sake. If you have a non-acidic sake I wholeheartedly recommends adding just a couple of drops of lemon or lime.

Overall it's an incredibly well balanced cocktail. You get the sake, mezcal and Italicus in the back. You even get the lavender and bitterness on the finish from the bitters. Wonderful!

We keep coming back to this, for its masterful subtlety and balance. A gentle Brie and Prosciutto are lovely accompaniments for us.

I think this is one of those drinks where one ingredient can make or break - In this case the Mezcal. Its only a half shot but it can overpower. I used an artisanal Siete Misterios which is smooth and not as smoky as some and it was perfect (for me).
Rather than the Italicus I used a Bergamot liqueur and ended up with something on my go back to list.
