Serve in a Coupe glass

Ingredients:
1 12 oz Ketel One Vodka
12 oz Gentian liqueur (e.g. Suze, Salers etc)
12 oz Strucchi Bianco Vermouth
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
14 oz Pink grapefruit juice (freshly squeezed)
2 dash Peychaud's or other Creole-style bitters
14 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of pink grapefruit zest twist (discarded) & 3 spots of Peychaud's bitters drawn through foamy head.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.

Review:

Bittersweet gentian is the prevalent flavour (hence the 'Suzie' name), toned down by bianco vermouth and freshened with pink grapefruit over a fortifying grainy vodka base. Peychaud's subtly adds its distinctive flavour.

Nice drink, but it’s missing something. Maybe I’m just not a vodka cocktail fan, felt like there was no underlying punch/hit to it.

We thought this could be encouraged into a dance between sweet and dry. So we added 10ml fino sherry and reduced the sugar syrup to 5ml. It's a very pretty and elegant cocktail. I know a boozy Suzie and she is pretty and elegant too.

The second time I made this I doubled the grapefruit to 15ml and increased the egg to 10ml. I might play around with it further, bit better think a splash more grapefruit worked, maybe.

I made this using my own homemade Suze and the variety of flavors was nearly overwhelming. Love it!
