Serve in a Coupe glass

Ingredients:

1 1⁄2 oz	Ketel One Vodka
1⁄2 oz	Gentian liqueur (e.g. Suze, Salers etc)
1⁄2 oz	Strucchi Bianco Vermouth
1⁄3 oz	Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
1⁄4 oz	Pink grapefruit juice (freshly squeezed)
2 dash	Peychaud's or other Creole-style bitters
1⁄4 oz	Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba (chickpea water) or Vegan egg white replacement

How to make:

1. Select and pre-chill a Coupe glass.
2. Prepare garnish of pink grapefruit zest twist (discarded) & 3 spots of Peychaud's bitters drawn through foamy head.
3. SHAKE all ingredients with ice and strain back into shaker.
4. DRY SHAKE (without ice).
5. FINE STRAIN into chilled glass.
