Ingredients:
1 12 oz Del Maguey Vida Clásico Mezcal
12 oz Strucchi Red Bitter (Campari-style liqueur)
34 oz Lime juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Egg white replacement (vegan)
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

Prepare:

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of lime slice wheel (dehydrated).

How to make:

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into ice-filled glass.

Garnish:

  1. Garnish with lime wheel.

A bittersweet mezcal-based sour, which, as the name suggests, is pink, and depending on your mezcal, delicately smoky.

History:

Adapted from a cocktail discovered in July 2025 at the Spotted Cat on Frenchman Street in New Orleans, Louisiana. Recipe by yours truly.

I went with Siete Misterioso Mezcal and the Martini Bitter using Stillabunt Magic Velvet Foamer and added a bit extra for a good foam.
Threw some Lime cubes (Whole Limes cut into cubes and frozen) and drank on a hot humid night.
Absolutely perfect.

For me this is five star. Just enough smoke from the Xicaru Silver. (Mesquite and ocote.) Looks good also. Thanks for bringing us this Simon.
