Glass:

Ingredients:
1 12 fl oz Del Maguey Vida Clásico Mezcal
12 fl oz Italian red bitter liqueur
34 fl oz Lime juice (freshly squeezed)
12 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
12 fl oz Egg white (pasteurised) or Fee Brothers Fee Foam cocktail foamer
3 drop Saline solution (20g sea salt to 80g water) or merest pinch of s
× 1 1 serving

Prepare:

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of lime slice wheel (dehydrated).

How to make:

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into ice-filled glass.

Garnish:

  1. Garnish with lime wheel.

History:

Adapted from a cocktail discovered in July 2025 at the Spotted Cat on Frenchman Street in New Orleans, Louisiana. Recipe by yours truly.

The first cocktail (of 6-8) in my short time playing with Bruto Americano where I found myself preferring Campari over it. Pretty stark difference in the overall result, maybe with the mezcal being the x-factor... No additional sugars need to be added. Great balance and harmony. Well done. (24 Apr 2026, 9:51p)

I found it excellent, yet in this field (agave + campari) I think I would prefer a bitter margarita.

The bitterness of the Campari combined with the citrus kick of the lime really brings out the mezcal smokiness. Super!

I went with Siete Misterioso Mezcal and the Martini Bitter using Stillabunt Magic Velvet Foamer and added a bit extra for a good foam.
Threw some Lime cubes (Whole Limes cut into cubes and frozen) and drank on a hot humid night.
Absolutely perfect.
