1 1/2 fl oz Blanco tequila
2/3 fl oz Ferrand Dry Curaçao liqueur
1/3 fl oz Lime juice (freshly squeezed)
1/6 fl oz Agave syrup (agave nectar)
4 drop Difford's Margarita Bitters
1 dash Orange Bitters by Angostura
1/3 fl oz Chilled water/mineral water (omit if using wet ice)

How to make

Glassware

Serve in a Coupe glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of lime wedge.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

  1. Garnish with lime wedge.

History

Created in February 2017 by yours truly at the Cabinet Room in London, England.

Review

The similarity of ingredients in this tequila-based riff on the classic Pegu Club to the Margarita are obvious, so it's not surprising the finished drink is reminiscent of a Margarita, only lighter with the lime notes a lot subtler. As well as the tequila, orange curaçao shines in this drink.

Mine came out too much for my palate on the sour side. For me it would probably benefit using Cointreau or an equivalent Triple Sec or add a dash of sugar syrup.

Agreed. The original recipe was from the days when orange curacao was sweeter so I've added a spoon of agave syrup to balance.
