Review:

Originally and rather boringly named "Celery Gin Cocktail" until I realised how close it is to David Embury's Nome. My original recipe (photographed) was served in a coupe glass:
60 Celery gin
30 Fino sherry
15 Celery saccharum

Bloody hell, that's good! I used a family tradition of drinking sherry before xmas lunch as an excuse to remove this one from my to-try list.

I used a celery-infused Plymouth gin, Lustau oloroso, my own celery saccharum (naturally), and Bitter Truths celery bitters.

It's rich, thick, tending towards the sweet, honeyed, dried sultana, melon rind from saccharum, tempered by some vegetal celery and the bitters. With the Lustau oloroso, this would work very well as a digestif. Gorgeous!
