¹⁄₂ fl oz	Lustau San Emilio Pedro Ximénez Sherry
1 ¹⁄₂ fl oz	Cream of coconut (e.g. Coco Lopez, Re'al etc.)
2 fl oz	Pineapple juice
1 fl oz	Lime juice (freshly squeezed)

How to make

Glass

Prepare

Select and pre-chill a TIKI MUG OR COLLINS GLASS.
Prepare garnish of grated nutmeg and mint sprigs.

Method

SHAKE all ingredients with ice.
STRAIN into glass filled with crushed ice.

Garnish

Dust with freshly grated nutmeg and garnish with mint sprigs bouquet.

Amazing...from now on we're using this in the base sauce for our Thai red curries. We added a gentle dash of chilli tincture.

Having tried and loved a whole lot of Trinidad Specials, Trinidad Sours, Trinidadi Issues, etc. I do have to say . . this is not my real Trinidad : (

Really enjoyed the flavors in this. Maybe needs a little more acidic bite or a slight effervescence from ginger beer? The only turn off for me might be the viscosity. I used my excellent homemade Coco Lopez substitute. Could be the culprit.
