Ingredients
1 fl oz Light white rum (charcoal-filtered 1-4 years old)
1 fl oz Dark/black/blackstrap rum
1 fl oz Lemon juice (freshly squeezed)
1⁄2 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
1⁄2 fl oz Egg white (pasteurised) or 3 dash Fee Brothers Fee Foam cocktail foamer

How to make

Glassware

Serve in an Old-fashioned glass

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of skewered lemon slice wheel and Luxardo Maraschino Cherry sail. (Skewer through either side of lemon with cherry skewered in the centre.)

Method

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice).
  3. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with skewered lemon slice wheel and maraschino cherry (sail).

Very tasty, but a little too sweet, though that may be because of rum choices, or I made my simple too sweet as it was a quick version. Still, I would make it again.

Nose is very lemon forward. Citrus sourness upfront that finishes very mildly sweet (Nicely balanced). A fairly dry drink. It was quite enjoyable

What’s the reasoning behind egg whites in cocktails? Personally I can’t stand the smell and don’t think a cocktail needs a head on it, I just make my sours without. Just wondering how it came to be a thing?

Egg white adds smoothing rounding mouthfeel to cocktails, particularly sours.
