1⁄2 oz | Monin Passion Fruit Syrup |
1⁄2 oz | Apple juice/apple cider (cloudy & unsweetened) |
1⁄6 oz | Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup) |
1⁄2 oz | Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Egg white replacement (vegan) |
3 dash | La Fée Parisienne absinthe |

I created this in 2013 for the Monin 'Twist Your Classics' Competition, which I won. To this day I think it's the best drink I have ever created, so light and silky, yet amazing depth of flavour and definitely a drink you can have a few of.
