Serve in a Coupe glass

Ingredients:
1 12 oz Bison grass vodka
23 oz Lemon juice (freshly squeezed)
12 oz Monin Passion Fruit Syrup
12 oz Apple juice/apple cider (cloudy & unsweetened)
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Egg white replacement (vegan)
3 dash La Fée Parisienne absinthe
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of smouldering star anise.
  3. SHAKE all ingredients with ice.
  4. STRAIN back into shaker.
  5. DRY SHAKE (without ice) to emulsify.
  6. FINE STRAIN into chilled glass.

History:

Adapted from a recipe created by Robb Collins, Group Head Bartender at London Cocktail Club in London, England.

I created this in 2013 for the Monin 'Twist Your Classics' Competition, which I won. To this day I think it's the best drink I have ever created, so light and silky, yet amazing depth of flavour and definitely a drink you can have a few of.

Hello Mr. Difford; May I ask: is the omission of the dry shake (for a cocktail with egg white) a rare exeception or is it an error?

It would appear that the egg white is currently erroneously listed twice (including the health warning) in this recipe?
