How to make:
SHAKE all ingredients with ice and strain into chilled glass.
1/2 fl oz | Light white rum (charcoal-filtered 1-4 years old) |
1/4 fl oz | Rhum Clément Blanc |
1/6 fl oz | La Fée Parisienne absinthe |
1/3 fl oz | Lime juice (freshly squeezed) |
1/3 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) |
1/4 fl oz | Chilled water (chilled) |
2 drop | Saline solution 4:1 (20g sea salt to 80g water) |
Review:
It's surprising both how much absinthe you can use in this bite-sized cocktail and then how much sugar is needed to tame it. Hit the balance and all these huge flavours play together harmoniously.
History:
Adapted from a cocktail made for me in September 2022 by Nate at Lulu White bar in Paris, France. Nate used a blend of light white rum and Clarin Communal Rum telling me this funky rum was key to balancing the huge favours of the absinthe. In an effort to keep my back bar in check, I used rhum blanc agricol for my funk.

- 0.7 standard drinks
- 18.16% alc./vol. (36.32° proof)
- 10 grams of pure alcohol
