I expected it to be much more sweet and flowery.

It’s like a ‘lite’ sweet Manhattan. It doesn’t have as much depth as a traditional sweet Manhattan and the Bitters are a bit overwhelming.

If using St German, wouldn’t this be better known as an Alpine Manhattan or a Savoie/Savoy Manhattan as it’s not made in Paris?

That is a well-balanced drink, I tried it without the Maraschino cherry and it wasn't as nice in my opinion so I'd definitely recommend making sure you've got some on hand.
