Ingredients
1 12 fl oz Calvados / apple brandy / straight applejack
34 fl oz Lemon juice (freshly squeezed)
12 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
12 fl oz Egg white (pasteurised) or 3 dash Fee Brothers Fee Foam cocktail foamer
3 dash Angostura Aromatic Bitters

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of lemon zest twist and skewered lemon slice wheel and Luxardo Maraschino Cherry sail.

Method

  1. SHAKE all ingredients with ice.
  2. STRAIN back into shaker.
  3. DRY SHAKE (without ice).
  4. FINE STRAIN into ice-filled glass.

Garnish

  1. EXPRESS lemon zest twist over the cocktail and discard.
  2. Garnish with skewered lemon slice wheel and maraschino cherry (sail).

All the time I have around 250 bottles in my little bar plus bitters, syrups. But I never tasted before the clavados, so I was looking for a naked recipe in order to really understand it. It has to be a young clavados since is very clear the apple notes. Is lovely, not very well known here, I will serve it in my next happy hour in the office (each friday at 4pm- until drop)

More complex than its bourbon namesake and without the tartness of the lemon/alcohol combo thanks to the apple that would make this cocktail seem soft. Very treacherous and very good!

I dialed back the sugar and should have followed Simon. Great cocktail and the egg white really smooths out the lemon bite. Having the apple flavor in a sour is perfect for fall cocktail.

Terrific! Using Daron calvados and Demerara syrup, the apple flavor was deliciously present. So interesting that apple and lemon would work so well together. Prefer it to a whiskey sour!
