Ingredients
3 slice Banana (preferably overripe)
1 fl oz Cachaça (unaged)
2/3 fl oz Caribbean light rum aged 3-5 years
1/2 fl oz Giffard Banane du Brésil liqueur
1/6 fl oz Corn/maize liqueur
1/3 fl oz Lustau Jarana Fino Sherry
1/6 fl oz Lime juice (freshly squeezed)
2 drop Saline solution (20g sea salt to 80g water) or merest pinch of s

How to make

Glassware

Serve in a Coupe glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of dried banana chip.

Method

  1. MUDDLE banana with cachaça and rum in base of shaker.
  2. Add other ingredients, SHAKE with ice.
  3. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with dehydrated banana chip.

To commemorate their legendary live 21 August 2021 concert at Kenwood house we are drinking a Bananarama (we might have had some very ripe bananas to use up too😁🍌! What a coincidence!)
We don't have corn syrup so I used navy rum instead.

The step in the recipe when ingredients 4 to 7 are added seems to be missing. To be inserted between 3. and 4., right?

From what I remember you're right, the rest of the ingredients go in the shaker before step 4. I think there's been an automated standardisation to most of the recipes and some of them have got a bit muddled.

That's right Shogi! I've amended the method so that step 4 is now 'Add other ingredients, shake with ice'.

If you want to try an interesting variant of this… swap the rum for some Skrewball Peanut-butter Whiskey. I’d say it’s not as complex but if you like peanut butter on your banana or are looking to channel your inner Elvis - it’s not half bad.
